Raspberry Napoleon

Napoleon is the other name of Mille-feuille – Thousands of Leaves – a dessert that delights many with its simple yet unique structure and taste.

Roll puff  pastry into thin layers. Dust with confectioners’ sugar. Cover with wax paper or silicon mat. Preheat oven to 220 ºC and bake until become golden. Cool down.

 

Raspberry mousse
  • 150 g yoghurt
  • 100 g confectioners’ sugar
  • juice from ½ lemon
  • 200 g raspberry puree
  • 5 sheets gelatin
  • 360 g whipped cream
 Glaze
  • 500 sifted confectioners’ sugar
  • vanilla
  • 30 ml boiled water

In a medium mixing bowl combine confectioners’ sugar and vanilla. Stir in enough boiling water to make a glaze of spreading consistency and set aside.
